Omega-3 Crunch Salad

Ever since joining the Kitchen of Life Team in May, I’ve noticed that one of the things many of our clients want more of, is recipes. We know you have busy lives, and thankfully we are here to help you find recipes that fit your lifestyle and that you can love making over and over again!

 

In addition, we all get into food ruts once in a while, where we end up eating the same things day in and day out and need some inspiration to make new delicious meals. In addition to life changing information, we will be sending you easy, healthy, and most important of all…tasty dishes that you can recreate and enjoy. Hopefully, over time you will build up quite a collection and you will never have to be bored of eating the same things again.

 

So this week I’ve decided to share with you a delicious salad that is super easy to make and hearty too. I love to enjoy this salad for lunch or dinner and it fills me up for many hours.

 

I also love that it contains hemp seeds, which is a great source of omega-3 fatty acids.

 

According to The University of Maryland Medical Center, “Research shows that omega-3 fatty acids reduce inflammation and may help lower risk of chronic diseases such as heart disease, cancer, and arthritis. Omega-3 fatty acids are highly concentrated in the brain and appear to be important for cognitive (brain memory and performance) and behavioral function.”

 

Omega-3 Crunch Salad

 

3 – 4 cups of mixed greens (chopped)
¼ cup green onions (chopped)
½ avocado (sliced)
½ tomato (chopped)
2 Tbs. hemp seeds
½ Tbs olive oil
¼ tsp. salt
Mary’s Gone Crackers (optional)

 

Put the mixed greens, green onion, avocado and tomato in a bowl.

 

Whisk the hemp seeds, olive oil and salt in a separate bowl.
Pour onto salad and enjoy!

 

And for that added crunch, try crumbling Mary’s Gone Crackers or other favorite raw or gluten free cracker on top.
